Monk or mesmer work well as secondaries, particularly in Pre. With either you can pick up both damage and support skills. But, anything will work. My first character started as a secondary ranger so I could pick up a pet, which worked fine until I got enough elementalist skills to build a full bar.
Don't sweat your secondary. It isn't really very important until after you Ascend and unlock all secondary professions. At that point you will have many more ele skills and will know more about when a particular secondary provides a skill or two that will complement a particular ele build. Even then, most of the time you will be playing with a full ele bar and your secondary will matter very little except when farming or otherwise using gimmick builds.

Almost every build posted on the internet these days will require 2-4 of the current GW games to use everything. http://pvx.wikia.com/wiki/Main_Page is a common place to get working builds, you may be able to modify a few of them to account for you only having prophecies.
As for secondary, I find mesmer is the best personally, the interrupts are great use to an elementalist, and some such as power drain also work as nice energy management if you're good enough at interupting.

When after the best damage output you would probably be better off focusing on ele skills and using your secondary profession for aid in energy management in order to keep your spells going longer without as much of a need for rest. In this regard mesmer would be your best bet.
For a more supportive role I would say monk or ritualist. Being that you only have prophecies you would want monk. This is support in the form of healing though and due to you not having access to the skills from the other campaigns this may not be a prudent move for you.
If you make a decision that you find you don't like later don't worry about it. After your character is ascended you can change it's secondary profession as much as you want without it costing you anything.
As another note do yourself a favor and don't rely on PvX. You will learn a lot more putting together your own setups. You won't be making great setups at first but you will get better with practice. It's better to get the hang of matching skills and attributes together early on when you don't have as many skills to choose from after all rather than try to get the hang of it later when you have well over 100 separate abilities to choose from.

You can remove it from your skill bar. You cannot unlearn a skill, though there is no reason you'd want to. There is no limit on the amount of skills you can learn, only on how many you can take with you (i.e, 8).

You mean redeeming a skill for the skill point you bought it for? Not possible. As I said, you cannot unlearn skills, under any circumstance. The only exceptions are a few occasional skills you get in missions, but you don't really learn those.
EDIT: It doesn't matter much anyway. After a while, you end up with more skill points then you know what to do with. I know I've got several hundred, possibly over a thousand skill points on my Warrior alone. Hardcore farmers probably have 10000+. After a campaign or so they stop mattering because you've got the skills you want/need and the rest is just up to what you feel like getting.

You gain one skill point each time you level up, and once you hit lvl 20, you gain one each time you gain enough exp to level up again (even tho you reached the level cap and will never level again) as the exp bar continues to fill.

GW isn't about grinding. You shouldn't need to grind anything until much later (cash for luxury items or titles). As previously mentioned, you gain a skill point when you level up or when you gain 15k XP at level 20. Even if you do what I did and get every skill available for your primary and secondary profession, you shouldn't have too many problems. Buy what you need and what looks interesting and you won't run out of skill points.

My first character was an Elementalist in Prophecies and I actually ended up deleting and remaking it a bunch of times because I felt so useless once I got out of pre-searing. However, once I did stick with it, got more skills, and got better at the game, I found ele to be a great profession. You won't have much flexibility at the start, but as I said, just stick with it if you want to play ele.
Comparing War to Ele, that is expected. Warriors don't need to worry about energy management, having low armor, or anything like that. Being a decent warrior isn't hard (find a target, hit the target), but being really good takes practice. Ele is more complex, though it depends a lot on what sort of build you're running.

I find Els are just fine, particularly in NM. Just remember if you stick to one type of damage to switch it out in certain areas due to the mob's defense.
